Vegan French Toast

Vegan French Toast made with the egg substitute JUST Egg.

Vegan French Toast

A vegan version of French Toast made with JUST Egg. If you’ve never heard of JUST Egg it is a vegan egg substitute made from mung beans. You can make scrambled eggs, omelets, French toast and many other dishes. It is awesome and that is why I use it to create my French toast. This post is not sponsored, I just really love the product.

How to make Vegan French Toast

What you will need

Full recipe with measurements in recipe card below

  • JUST Egg*
  • Oat milk
  • Cinnamon
  • Nutmeg
  • Sugar
  • Vanilla extract
  • Vegan butter
  • Bread

Method

  1. Combine JUST Egg, oat milk, cinnamon, nutmeg, sugar and vanilla extract in shallow baking dish. Whisk to combine.
  2. Add vegan butter to a medium heat pan.
  3. Dunk bread one slice at a time in the egg mixture. Coat both sides evenly.
  4. Add 1-2 coated slices at a time to hot frying pan.
  5. Cook 2-4 minutes on the first side or until golden and then flip onto the other side. Cook for an additional 2-3 minutes on the second side or until golden.
  6. Top with vegan butter and syrup.

How to store Vegan French Toast

Store any leftovers in a covered container in the fridge. Reheat by putting any leftovers into a 250°F oven or toaster oven until warmed through.

  • JUST Egg is a vegan egg substitute. It can be found on the egg isle. It is made from mung beans.
  • I have made this recipe with smaller slices of bread and was able to get 7 slices of French toast. When I made the recipe with large sourdough slices I was able to make 4

Ingredients

  • 1/2 cup JUST Egg*
  • 1/3 cup oat milk
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tbsp sugar
  • 1/4 tsp vanilla extract
  • 1 tbsp butter(for frying + more for topping)
  • 4 large slices or 7 small slices bread**

Instructions

  • Combine JUST Egg, oat milk, cinnamon, nutmeg, sugar and vanilla extract in a bowl or shallow baking dish. Whisk to combine.
  • Heat a frying pan to medium heat and add 1/2 tbsp of vegan butter.
  • Dunk bread one slice at a time in the egg mixture. Make sure to coat both sides evenly. Add 1-2 coated slices at a time to hot frying pan. Cook 2-4 minutes on the first side or until golden and then flip onto the other side. Cook for an additional 2-3 minutes on the second side or until golden. Repeat with remaining slices of bread adding more butter to the pan when necessary. Top with vegan butter and syrup.
