Spicy Peanut Soup

Creamy and comforting spicy peanut soup

Spicy Peanut Soup

You probably already have all the ingredients for this soup in your pantry right now! This soup is comforting, flavorful and a great budget friendly vegan meal. Impress vegans and non vegans with this soup. I love bring this soup to potlucks in a crockpot, it is always a huge hit!

How to make Spicy Peanut Soup

What you will need

  • Vegetable broth
  • Water
  • Yellow onion
  • Garlic
  • Tomato paste
  • Ginger powder
  • Natural peanut butter
  • Chickpeas or protein of choice *see notes
  • Garlic powder
  • Onion powder
  • Salt
  • Maple syrup* see notes
  • Kale
  • hot sauce

Method

  1. In a large pot add the vegetable broth, water, diced onion and minced garlic. Simmer on medium/low until the onion is translucent about 15-20 minutes. Add the ground ginger.
  2. To a heat safe bowl add the tomato paste and peanut butter. Spoon 2-3 scoops of hot broth to the peanut butter/tomato paste mixture. Stir. Once the mixture is thinned out add everything back to the pot.
  3. Add the chickpeas, garlic powder, onion powder, salt and maple syrup to the pot. Stir then add the strips of kale and hot sauce. I usually add about ¼ cup of hot sauce (then add more to my individual bowl because I love spicy food.) I suggest adding a little at a time and adjusting if more is needed, my motto is you can always add more but you can’t take it away.
  4. Cook on low for 10-15 minutes allowing the kale leaves to wilt. If making for a big group of people I suggest going mild and putting the hot sauce on the table, allowing people to put more in their bowls if they would like it to be more spicy.

Notes

  1. You can add any protein you’d like. The other protein I usually use is crumbled tofu. I just crumble the tofu right from the block into the soup while it’s cooking.
  2. Not all peanut butters are the same and some may be sweeter than others. If your peanut butter is really sweet just add one tbsp of maple syrup and then adjust if more is needed. The maple syrup is added to create a depth of flavor that compliments the spicy hot sauce.
  3. I use Cholula because it is my favorite and I think it goes well in this soup. Any hot sauce should work though.

  • 1/2 tsp salt + more to taste if needed
  • 2 1/2 tbsp maple syrup* see notes
  • 1 bunch kale chopped into 1 1/2 inch strips
  • hot sauce to taste* see notes

Instructions

  • In a large pot add the vegetable broth, water, diced onion and minced garlic. Allow the broth to simmer on medium/low until the onion is translucent about 15-20 minutes. After the onion has become translucent add the ground ginger.
  • To a heat safe bowl add the tomato paste and peanut butter. Using a ladle, spoon 2-3 scoops of hot broth to the peanut butter/tomato paste mixture. The hot soup will help loosen up the tomato paste and peanut butter. Once the mixture is thinned out add everything back to the pot.
  • Add the chickpeas, garlic powder, onion powder, salt and maple syrup to the pot. Stir then add the strips of kale and hot sauce. I usually add about ¼ cup of hot sauce (then add more to my individual bowl because I love spicy food.)
