Baked Oatmeal with Peanut Butter and Chocolate Chips

This baked oatmeal with peanut butter and chocolate chips is super easy, vegan and made in less then an hour.

Baked Oatmeal

Is there any better food combination then peanut butter and chocolate? I truly don’t think there is! My baked oatmeal is filled with delicious flavors of peanut butter and chocolate and is super easy to make! This is the perfect dish to make for a brunch or even to meal prep for an easy weekday breakfast!

Here’s what you need to make baked oatmeal

  • Rolled oats– Rolled oats will work best in this recipe. Quick oats will cause the oatmeal to be way too mushy.
  • Baking powder– To help give a little lift.
  • Ground flax seed+ water– Ground flax seed acts as our “egg” in this recipe. When you combine ground flax seed and water it becomes gelatinous and acts as a binder in vegan baked goods.
  • Vegan butter(melted and cooled)- For richness and flavor. If you don’t have vegan butter you can substitute with coconut oil.
  • Almond milk– or any other non-dairy milk.
  • Brown Sugar– For sweetness.
  • Vanilla Extract– For depth of flavor.
  • Non-dairy chocolate chips
  • Peanut butter
  • Salt– Helps all of the flavors come together.
Baked Oatmeal

Here’s how to make Baked Oatmeal

  1. Preheat oven to 375℉ and grease a medium to large sized baking dish.
  2. Combine the ground flax and water in a medium sized bowl and let the mixture sit for around 5 minutes. To a large bowl combine flour, baking powder and salt and set aside.
  3. Once the flax and water has become more gelatinous, whisk in the melted and cooled vegan butter followed by the brown sugar and vanilla extract.
  4. Pour the almond milk into the oats and then stir in the flax mixture. Add in the chocolate chips and then let everything sit for 5 minutes to thicken.
  5. After 5 minutes pour the mixture into the prepared baking dish. Add globs of peanut butter onto the top of the oats then use a toothpick or a butter knife to help swirl the peanut butter around.
  6. Bake for 40-45 minutes or until desired doneness. (The shorter you bake it for the softer your baked oatmeal will be and the longer you cook it for the more firm your baked oatmeal will be.)
  7. Let the baked oatmeal sit for 5-10 minutes to firm up before cutting into it.

Serving and storing

This dish is best when served warm. You can serve with a drizzle of maple syrup, a scoop of peanut butter on top or even vegan whipped cream.

Store any leftovers in an airtight container in the refrigerator and reheat in the microwave.

  • 1 3/4 cup almond milk
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 cup non-dairy chocolate chips
  • 1/4 cup peanut butter
